St. Louis Style Pork Steaks

  • 1 bone in Pork shoulder cut into steaks, one inch thick
  • Uncle Bobs Rib Rub (or your favorite rub)
  • BBQ Sauce (optional)


Season liberally with Uncle Bob's Rib Rub (or your favorite rub) and then refrigerate covered 1 to 4 hours or overnight if possible.

Smoke on an indirect charcoal fire, preferrably a Weber Grill with a drip pan with water and hickory and apple wood.
