Chicken Adobo and Rice

  • 2 lbs chicken with bones (Suggestions in order of cooking time: drumettes, wings, things, drumsticks, whole chicken cut up)
  • 5-10 cloves of garlic
  • 2-3 large potatoes
  • 3-5 large bay leaves
  • 1 cup of soy sauce
  • 1 cup of vinegar
  • black pepper
  • 2 cups long grain white rice
  • 3 cups water
  • 1/2 teaspoon salt


Heat oil.

Chop garlic in large chunks.

Saute garlic and brown chicken in your pot.

Add Soy sauce, vinegar, bayleaves, and up to a cup of water to cover meat, cover and bring to a boil. Boil for 20 minutes, cut potatoes into large chunks add to meat mixture, bring down to a simmer and cook for another 30 minutes until potatoes and meat are tender.

Add pepper liberally.

To make rice:

Place rice in fine-mesh strainer set over bowl. Rinse under running water, swishing with hands until water runs clear. Drain thoroughly.

Bring rinsed rice, water, and salt to boil in saucepan over medium-high heat. Cook, uncovered, until water level drops below surface of rice and small holes form, about 5 minutes.

Reduce heat to low, cover, and cook until rice is tender and water is fully absorbed, about 15 minutes. Serve.
