  • 1 cup cold water
  • 1 1/2 Tablespoons Turkish coffee (which is very finely ground and may contain cardamom)
  • Sugar to taste (I like to use 1 Tablespoon)


1. Combine all ingredients in the Turkish coffee pot.

2. Over low heat, bring to a boil without stirring. Just before it boils over, remove from heat and spoon the foam into 3 warm espresso cups.

3. Return to the heat and repeat the boiling and cooling process 2 more times, without skimming off the foam.

4. Pour into the espresso cups (where the previous foam is already). Remind the guests to let it sit for a bit to allow the grounds to sink to the bottomand be careful not to drink all the coffee.
