Green Beans with Hard Boiled Eggs and Dill

  • 2 lbs. fresh green beans, ends trimmed
  • 2 oz. cocktail rye bread, cut into very small cubes
  • 4 Tablespoons butter
  • 1 large onion, halved and sliced thinly
  • 6 hard boiled eggs, peeled and chopped
  • 3 Tablespoons chopped fresh dill
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper


1. In a large pot of salted boiling water, cook green beans until they are al dente. Immediately remove them from the water and plunge into ice water. When cold, remove from water and reserve until needed.

2. Place the rye bread cubes on a baking sheet and cook in a 375 F oven for about 10-15 minutes or until they are lightly browned and crispy. Remove from oven, let cool, and reserve.

3. When ready to serve, saut� onion in butter over moderate heat in a very large saut� pan. When the onions are cooked through and soft (about 10 minutes), add the green beans. Continue to cook until they are heated though (about 8 minutes). Add eggs, dill, salt and pepper and continue to cook for several more minutes.

4. Pour the green beans into a serving dish and top with rye croutons.
