Blue Cheese Baked Creamed Spinach

  • 36 oz. baby spinach
  • 1 1/2 cups finely diced onion
  • 1/2 stick (4 Tablespoons) butter
  • 1/2 cup flour
  • 3 cups whole milk
  • Pinch nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 8 oz. crumbled blue cheese
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly and finely grated parmesan cheese


1. Cook the baby spinach in batches in a large pot of salted boiling water. As they are removed, put them in a colander and run cold water over it to chill them quickly. When the spinach is all cooked and cooled, squeeze it well a bit at a time to remove all excess water. Reserve.

2. In a large saucepan, saut� onions in butter over moderate heat until the onions are cooked through and soft (about 10 minutes). Add flour and continue to cook, stirring frequently for several minutes.

3. Add milk and bring to a boil, whisking constantly. Simmer for a few minutes.

4. Add nutmeg, salt, pepper, and blue cheese. Stir to melt the cheese. Pour into a large bowl.

5. Add the cooked and squeezed spinach to the sauce and combine well.

6. Pour this mixture into an 8 x 8 baking dish. Top with panko and parmesan.

7. Place on a baking sheet and put in a 375 F oven for 40 minutes or until the spinach is bubbling hot and well browned.
