Wally's Greek Salad

  • 1 head of romaine lettuce, cut in 1 1/2 inch pieces
  • 4 cups mixed greens
  • 2 tomatoes, cut in 1 1/2 inch pieces
  • 1 cucumber, peeled and cute in 1 1/2 inch pieces
  • 1 red onion, sliced in thin rounds
  • 1 green onion, thinly sliced
  • 1/2 teaspoon of sumac
  • 1/2 teaspoon ground oregano
  • kosher salt
  • freshly ground pepper
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 cup kalamta olives, black and green
  • 1/4 cup feta cheese


In a large bowl mix the lettuces, tomatoes, cucumber, red and green onions. Toss together. Sprinkle the sumac, salt and pepper on the lettuce. Drizzle the olive oil, red wine vinegar and lemon juice on top of the salad. Toss together. Plate the salads and then top with the kalamata olives and feta cheese.
