  • 2 cups fresh garlic cloves, peeled
  • 6 cups Canola oil
  • 1 cup lemon juice, freshly squeezed
  • 1/2 teaspoon kosher salt


Put the garlic cloves in the bowl of the food processor and add 1 cup of the oil and the salt. Blend for 2-3 minutes until the mixture is a thick paste. Leaving the stopper in the food processor, add 1/2 of the remaining oil, so it slowly drips through the small hole in the bottom of the stopper. Add the lemon juice using the same technique and then the remainder of the oil. Blend until the mixture becomes a smooth, thick paste, about 10 minutes.
