  • 1 pound Wild Rice
  • 2 quarts Grape seed Oil
  • 12 ounces Sugar
  • 1 cup Coconut Milk Powder
  • 5 liters Liquid Nitrogen


Heat grape seed oil in a large deep pot.

Puff wild rice in grape seed oil, by dropping it in the hot oil and watch it explode.

Strain rice, using another pot.

Weigh the puffed wild rice and calculate 70% of weight in sugar.

Cook rice with sugar on low heat while stirring constantly until sugar melts and sticks to the rice.

Heat rice in batches and form into desired shapes.

Drop rice treats in liquid nitrogen for 3-5 seconds, then top with coconut milk powder and serve immediately.
