Sweet Potato Quinoa Crock Pot Chili

  • 1/3 of a sweet potato
  • 1/3 cup quinoa
  • 1/3 of an onion
  • 1 clove garlic
  • 1/2 canned of stewed tomato
  • 1 cup chicken broth
  • 1 canned pinto beans
  • Salt
  • Pepper
  • 1/2 tsp cumin
  • 1/4 tsp paprika
  • 1 tbsp chili powder


Cut and place a third of an onion into the pot. Add garlic. Cut sweet potato into bite size pieces and add to pot. Add stewed tomato and chicken broth. Next, add the quinoa and pinto beans. Then, season with salt, pepper, cumin, paprika and chili powder. Place lid on the pot and let cook. Depending on your schedule and the size of your crock pot, cooking times may vary. A smaller pot should sit for about 3 to 5 hours on a low setting. Once the meal is ready, you can add condiments such as grated cheese and avocado. Now you have a hearty and healthy meal for two all under $5!
