Burgers will always top the list of favourite comfort foods, but a greasy burger topped with cheese and mayonnaise tips the scales at over 50 grams of fat! To cut the fat, Chef Jo swaps regular ground beef with extra-lean ground beef or sirloin, but the big trick to cut even more fat and still keep the burger moist is to use cremini mushrooms to replace half the meat in the patty. A smoky, tangy spread with a non-fat Greek yogurt base replaces the mayonnaise, and sweet caramelized onions top everything off with a big punch of flavour and virtually no fat.

"If I had to pick a favourite recipe from my cookbook, it would be this one," says Chef Jo Lusted. "My love of cooking began with my grandma baking chocolate chip cookies. I was far too little to be helpful, I'm sure, but we had so much fun. I can just picture her helping me stand on my little wooden chair so I could reach the countertop and scoop out uneven piles of cookie dough. I'd use that same chair to sit in front of the oven and watch the cookies rise . . . eager to give my grandpa one of my masterpieces straight out of the oven."

Thanks to her grandma and their chocolate chip cookie baking hobby, Chef Jo Lusted likely ate more raw cookie dough as a child than most kids, and cookie dough ice cream instantly brings out that little kid in her. This egg-free version of her chocolate chip cookie recipe is safe to eat raw. One word of warning: You may have to make extra. When she was testing this recipe, she couldn't resist sneaking into the freezer for a few bites here and there.

Like spaghetti carbonara, this Italian classic has two versions. In the American version, the eggplant is breaded, deep-fried and layered; in the Italian version, it's simply fried in a ton of olive oil. To bread or not to bread? Chef Jo Lusted decided breaded anything tastes better than not, so the American version reigned supreme. Pressing and draining the water from the eggplant is important, as it gives the eggplant a beautiful texture and keeps it crispy on the outside.
