Spinach Cheese Quiche

  • 12 ounces low fat evaporated milk (can use the regular evaporated milk)
  • 1/3 cup low fat cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 large eggs
  • 3 egg whites
  • 1 deep dish pie crust
  • 10 ounces frozen spinach, thawed and squeezed out


Bake pie crust per directions and allow to cool. Place spinach in the bottom of the pie crust. Whisk milk, cottage cheese, parmesan cheese, salt, pepper, eggs, and egg whites together. Pour this mixture over the spinach. Bake at 425 degrees on a baking sheet for 15 minutes. Reduce heat to 350 degrees and continue baking for 20 minutes or until mixture is set.
