Northwest Salad

  • A couple of big handfuls of spring lettuce mix
  • 3/4 cup fresh blackberries
  • 3/4 cup fresh blueberries
  • 3/4 cup fresh raspberries and/or sliced strawberries
  • 1/4 cup chopped sugared pecans (recipe to follow)
  • Lemon salad dressing (recipe to follow)


You could toss the salad together, but I prefer to create beautiful layers. Starting with the lettuce, sprinkle the other ingredients on top and enjoy the Northwest on a plate. Salad Dressing

Juice from 1/2 fresh lemon (about 1/4 cup)
3/4 cup extra virgin olive oil
2 teaspoons sugar
Salt and pepper to taste

Simply shake the salad dressing ingredients together in a container with a lid and drizzle on your gorgeous salad. This recipe makes about a cup of dressing.

Sugared Peacans

1/2 teaspoon vanilla extract
1 cup white sugar
3/4 teaspoon salt
1 teaspoon ground cinnamon
Dash of freshly ground nutmeg
3 cups pecans

Preheat oven to 250 degrees. Beat 2 egg whites with hand mixer until frothy. After egg whites are frothy add vanilla, sugar, salt, cinnamon and nutmeg. Mix well. Stir in pecans. Line baking sheet with parchment paper and spread pecans onto baking sheet. Bake pecans for 45 minutes to an hour, stirring every 10-15 minutes. Sugar coating will harden as they cool.
