Loaded Mashed Potatoes

  • 2 pounds baking potatoes, peeled and quartered
  • 1 cup milk
  • 2 tablespoons butter
  • 1/2 cup Horseradish cream
  • Sour cream
  • 3 pieces of bacon
  • 1/4 cup Cheddar cheese, shredded
  • 2 tablespoons minced garlic

Directions

1. Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain.

2.In a small saucepan heat butter and milk over low heat until butter is melted. Using a potato masher or electric beater, slowly blend milk mixture into potatoes until smooth and creamy. Season with horseradish cream, salt, and pepper to taste

3. Cook bacon and chop.

4. Carmelize garlic in bacon grease, cooking for about 4 minutes, being careful not to burn it.

5. Combine all ingredients. Top with cheddar cheese and sour cream.
