Hanukkah Latkes

  • 4 large potatoes
  • 1 large onion
  • 1/2 cup flour
  • 3 tablespoons matzo meal
  • 3 eggs
  • salt
  • pepper
  • peanut oil for frying

Directions

Peel potatoes and grate them in a food processor. Place them in colander and sprinkle with salt. Let stand in colander for 10 minutes and squeeze the liquid out by hand.

Let stand again for 2 minutes and squeeze again. Do this until the potatoes have little to no liquid left in them. Then grate onion in food processor and combine all the ingredients.

Heat oil in skillet and drop latke mixture into the oil. Brown on both sides and serve immediately.
