Greek Tiropita - Cheese Pies

  • 1 lb. feta cheese
  • 4 oz of cream cheese
  • 16 oz ricotta cheese
  • cup of parmesan cheese
  • 5 eggs beaten
  • Phyllo Pastry Sheets
  • melted butter


Crumble the feta into tiny pieces in a large bowl, add the rest of the cheese and mix well. Add the eggs and mix together until the mixture is slightly thick and lumpy.

Carefully remove the phyllo sheets and cut them half. When wrapping one tiropita cover the rest of the phyllo stack with a damp paper towel to keep from drying up.�Butter the surface of the sheet you're using with a brush, add a tablespoon of cheese mixture to the center and carefully roll and cover mixture into tiny pastry puff. Continue with the rest of the sheets and filling.�

Preheat the oven to 350 degrees. Place on a greased baking sheet and brush each tiropita with melted butter. Bake for about 15 minutes, until slightly golden and let cool before serving.�
