Egg-less Vanilla Pudding
- 2 1/2 cups 2% milk
- 1/2 cup sugar
- Pinch of salt
- 3 tablespoons cornstarch
- 1 teaspoon vanilla extract

Combine the milk, sugar, and salt in a medium sized saucepan over medium low heat. Add 2 cups of the milk to the sugar mixture and stir until combined.
In a small bowl combine the remaining 1/2 cup of milk and the cornstarch, whisking together until there are no lumps.
Once the milk and sugar mixture starts to steam add in the cornstarch mixture, stirring until incorporated. Continue to heat the pudding, stirring occasionally, until it begins to thicken.
Just before it comes to a boil turn the heat down very low and heat for several more minutes, keep stirring.
Take the pudding off the heat once it is thickened and stir in the teaspoon of vanilla. Pour the pudding through a strainer to get out any remaining lumps, then chill in the fridge for several hours.
