Todd Prepares Seafood Paella at Rooftop Bachelor Pad
Seafood paella is a dish originating from Valencia, Spain. After traveling to Spain, Todd experiented with his own version of the recipe. His tried and true methods have his family and friends coming back for more. He uses chicken thighs, pork chorizo, squid, clams, mussels, shrimp, short grain rice, saffron and blends it all together.
The process of making paella takes about an hour and fifteen minutes. Taking your time is key to a great paella.
Blooming the saffron was a technique Todd learned as a way to get the full flavor and oils from the saffron. It is an important part of making the paella. Another very important part to making the paella socarrat the correct way is to stir in the rice and let it roast for a few minutes and then you should not stir it again.
