Fred and Kyle throw Joey a "collards curve ball" by pairing this traditional dish with a big, fat steak!
The greens must cook for about two hours to become sweet and tender. During that time, Fred gives Joey the history of his mom's recipe and the 20 years it took to get the full recipe from her. He also is the keeper of the family heirloom 'collard chopper' and his grandmother's bowl to chop them up into bite size morsels.
