Kelsey Byers' Healthy Cupcakes

  • 1 cup old fashioned oats
  • 1/2 cup coco powder
  • 16 oz. egg whites
  • 12 packets of stevia
  • 1/2 can pumpkin pie filling
  • 1 teaspoon baking powder
  • Labrada's Lean Body For Her Vanilla Cupcake protein powder
  • Water (about 1/3 cup)

Directions

For the cupcakes mix together oats, coco powder, egg whites, stevia, pumpkin pie filling and baking powder. Pour into a muffin pan. Bake about 30 minutes at 350-degrees.

For the icing, mMix the protein powder and water until you have an icing consistency that you can spoon over the cupcakes after they cool.
