Renowned winemaker and visionary Hugo d'Acosta, founded La'Escuelita, a non-profit winemaking school in Mexico. It opened in 2004.

Hugo introduces Rick Bayless to his Casa de Piedra wines before taking Rick on a tour of the school where locals and chefs come to make their own wines.

After Hugo shows Rick how he makes his Casa de Piedra wines, they taste test a few of his favorites -- a chardonnay and tempranillo blend. They paired the wines with some local cheese and bread.

Then, he takes Rick on a tour of the school where locals and chefs come to make their own wines.

Hugo's wine school has produced a lot of great winemakers in the area. The school was designed by Hugo's brother -- an architect who works in a eco-friendly style that reflects the student's wine making. Everything at the school gets recycled, including the materials that were used to construct the buildings.
