  • 3- zucchini and/or squash 1 jar salsa or 1 can Ro-tel
  • Cumin to taste
  • 1 cup water
  • 1 cup Quinoa or brown rice
  • 1 can El Pato (spicy tomato sauce)
  • 1 can of black beans
  • Corn tortillas


Cube your squash and zucchini and cook in salsa or a can of Ro-tel. Add cumin to taste.

To prepare the quinoa or rice, combine the quinoa or rice with El Pato sauce, water and black beans.

Put the cooked squash and zucchini in tortillas. Serve with quinoa or rice on the side.
