Uncooked Cranberry Relish

  • 1 lb. fresh cranberries
  • 1/2 cup brown sugar
  • 1 20 oz. can of crushed pineapple, lightly drained
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground black pepper
  • 2 mangos, peeled, pit removed and cut into a small dice


1. Combine all ingredients except the mangos in a food processor. Pulse until it is chopped somewhat finely.

2. Fold in mangos, place in refrigerator for at least 2 hours before serving.
