Seafood Stew Recipe

  • 2 yellow onions
  • 2 zucchinis
  • 2 carrots
  • 1/2 pound broccoli crowns
  • 2 red bell peppers
  • 1 yellow bell pepper
  • 1/2 pound mushrooms
  • 1/2 pound wild mushrooms
  • 1/2 pound cleaned calamari
  • 1/2 pound cleaned octopus
  • 1/2 pound fresh Icelandic cod
  • 1 pound cleaned cuttlefish
  • 1 pound mussels
  • 1 pound little neck clams
  • 1 pound jumbo shrimp)
  • 1/2 cup olive oil
  • 1/2 ounce salt
  • 1/2 ounce black pepper
  • 1/2 ounce dill
  • 1 ounce garlic
  • 2 ounces fresh parsley
  • 1 lemon
  • 3 pounds of cooked rice

Directions

1. Add 1/2 cup of olive oil into large saute pan

2. Caramelize sliced yellow onions in olive oil (Stir)

3. Add calamari, octopus and cuttlefish into sauté pan (Stir)

4. Add chopped zucchini, broccoli, peppers, mushrooms and carrots into pan (Stir)

5. Add mussels, clams, shrimp and Icelandic cod into sauté pan (Stir)

6. Add salt, pepper, garlic and dill seasoning into sauté pan (Stir)

7. Top all ingredients with fresh chopped parsley and let simmer until fully cooked

8. Serve over a bed of rice and garnish with sliced lemon wedges
