  • 1 cup water
  • 1/2 teaspoon salt
  • 1 stick (4 ounces) unsalted butter
  • 1 cup flour
  • 5 eggs
  • 1 cup crumbled blue cheese


1. In a heavy saucepan, combine the water, salt, and butter, and bring to a boil.

2. Add the flour all at once, whisking constantly, until it forms a paste. Cook, stirring, for one minute more.

3. Remove from heat and whisk in the eggs one at a time (by hand or using and eclectic mixer). Stir in the cheese.

4. While the dough is still warm, spoon or pipe onto parchment-lined baking sheets. They should be shaped as small balls.

5. Bake in a preheated 400° oven until brown and crisp, about 25-20 minutes. Serve warm.
