  • 7-8 oz. Kasseri cheese, cut into 1/4-1/2 inch thick slices
  • Flour for dredging
  • 1 1/2 Tablespoons extra virgin olive oil
  • 2 Tablespoons ouzo
  • Lemon wedges
  • Hot pita bread


1. Dip the cheese slices in cool water and then while they are still wet into the flour, so as to coat them well.

2. Heat a saute pan, slightly larger than the pieces of cheese, on high heat. Add olive oil and once the oil starts to smoke, the cheese.

3. Once the first side starts to melt and forms a crust, flip them over using a metal spatula. Continue cooking for a couple more minutes until the cheese melts more and another crust has formed on the other side of the cheese.

4. Pour the ouzo into the pan and ignite it by tilting the pan (if a gas stove) or using a lighter (if an electric stove). This can also be done in front of the guests. Be aware as it will flame up considerably since the pan is hot. It is customary at this point to shout "Opa!"

5.Squeeze some lemon juice on top and serve in the pan with pita bread.
