Rolled Pork Loin

  • 20 cloves garlic
  • 1/2 cup and 2 Tablespoons extra virgin olive oil
  • 1 cup tempeh cut into 1/4 inch strips
  • 12 oz baby spinach
  • 1 lb pork loin roast, trimmed of all external fat
  • 1/4 tsp salt
  • 1/4 tsp pepper


1. Place garlic in a small sauce pot and cover with olive oil. Place in a 350 degrees oven until garlic begins to turn golden brown (approximately 35 minutes). Remove garlic from oil and let cool. Reserve oil for later use in another recipe.

2. Heat 1 Tablespoon olive oil in a large sauté pan on high heat. Sauté tempeh until it begins to brown, add spinach and quickly sauté until the leaves have completely wilted. Remove from pan and let cool.

3. Place pork between 2 sheets of plastic wrap and pound out until 1/4 inch thick. Smash and rub garlic in a thin layer on the top layer pork. Season pork with salt and pepper. Layer the spinach mixture across the pork and roll tightly.

4. Tie pork with butcher's twine so none of the spinach mixture comes out. Sauté pork roast in sauté pan with 1 Tablespoon on high heat until it is nicely browned. Place in a 350 degrees oven until it reaches an internal temperature of 160 degrees (about 12-15 minutes).

5. Remove from oven, let rest for 5 minutes, untie, slice and serve with Dijon sauce (Click here for recipe).
