Polenta with Spicy Sausage

  • 3 cups water
  • 1 cup polenta
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup grated Parmesan cheese
  • 3 Tablespoons olive oil
  • 1 cup diced onions
  • 3 cloves minced garlic
  • 12 oz. cooked smoked, spicy sausage links (cut in half lengthwise and then cut into thin slices)
  • 1 pt. grape tomatoes, halved
  • 6 oz. fresh mozzarella "Pearls" (very small fresh mozzarella balls)
  • 1 1/2 oz. fresh basil leaves, chopped (about 1/2 cup)


1. In a small saucepan, bring water to a boil.

2. Add polenta in a steady stream while stirring constantly to avoid lumps. Add salt and black pepper. Bring to a boil, reduce heat to a simmer and stirring constantly, and cook until tender. (See manufacturer's instructions as different polenta cooks for different lengths of time.) Remove from heat and stir in Parmesan. Keep warm.

3. Meanwhile, saut� onions in olive oil until lightly browned and translucent.

4. Add garlic and sausage and continue saut�ing until the sausage is hot.

5. Add grape tomatoes and cook until they start to wilt.

6. Add mozzarella pearls and cook only for a minute.

7. Serve over polenta. Sprinkle with basil.
