Pisco Sour Chilean Cocktail

  • 4 oz. pisco
  • 2 oz. simple syrup
  • 1 1/2 oz. lemon juice
  • Ice cubes
  • 1 large egg white (pasteurized)
  • Angostura bitters

Directions

To make simple syrup, bring 1 cup of water and 1 cup of sugar to a boil. Remove from heat and allow to cool. Keep covered in the refrigerator until needed.

1. Combine all ingredients in a shaker and shake vigorously for a minute until all the ingredients are cold and a foam has formed.

2. Strain into Champagne flutes.

3. Dot with a drop or two of Angostura bitters on top of the foam.
