  • 1-1/2 pound cooked turkey scraps
  • 1/4 cup diced onion
  • 1/2 cup diced green pepper
  • 1 cup diced celery
  • 2 Tablespoons lemon juice
  • 1 cup mayonnaise
  • Salt and pepper to taste


1. In a food processor, grind the onion, green pepper, and celery until well minced. Put into a bowl.

2. In the same food processor, grind the turkey until it too is minced. Add it to the minced vegetables.

3. Add the remaining ingredients and season with salt and pepper.

4. Serve with toasted bread or crackers.
