Homemade Spicy Breakfast Sausage

  • 5 lbs. very cold ground pork butt
  • 2 Tablespoons salt
  • 2 teaspoons black pepper
  • 1-1/2 teaspoons white pepper
  • 2-1/2 teaspoons ground sage
  • 2 teaspoons chile flakes, ground in the spice grinder
  • 1/2 teaspoon nutmeg
  • 1-1/4 teaspoons ground thyme
  • 1/2 teaspoon ground ginger
  • 1-1/4 1 teaspoons ground coriander
  • 1 Tablespoon sugar
  • 3/4 cup cold water

Directions

1. In a bowl, combine all ingredients except pork.

2. Pour the liquid spice mixture into the cold ground pork. Mix vigorously until the meat becomes slightly elastic.

3. Form the meat into small patties about 3" in diameter.

4. To cook, sauté the patties over moderate heat until they are cooked through (165°F with an instant-read thermometer), 5 to 10 minutes.
