Homemade Pita Bread

  • 1 package dry yeast
  • 1 1/4 cups warm water - about 115 F
  • 2 teaspoons sugar
  • 3 1/4 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 1/2 Tablespoons extra virgin olive oil

Directions

1. In a small bowl, combine yeast, water, and sugar. Let sit for about 10 minutes or until it starts to froth.

2. In the mixing bowl of an electric mixer, combine this yeast mixture with the rest of the ingredients. Mix the ingredients into a dough using the dough hook. Continue to knead the dough for another 5-6 minutes, or until it forms a smooth elastic dough.

3. Remove the bowl from the mixer, cover with a towel, and place in a warm location. Let it sit until it doubles in volume.

4. Place a large pizza stone into a 500 F oven to pre-heat.

5. Punch down the dough. Roll it into a rope that is about 2-inches wide. Cut the rope into 8 pieces. Let rest for several minutes.

6. On a floured surface, roll each piece of pita bread until it forms a disk about 1/4-inch thick. They will be about 6-7 inches in diameter. Let the dough rest for 10 minutes.

7. Carefully place the pita breads directly onto the hot pizza stone in the oven. This may have to be done in batches. Cook for about 2 minutes on each side. The finished pita should be puffed and lightly browned on each side.

8. Serve immediately.
