Ham, Goat Cheese and Spinach Turnovers

  • 2 cups finely diced onions
  • 3 Tablespoons olive oil
  • 3 cloves garlic, minced
  • 9 oz. baby spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 Tablespoons minced parsley
  • 8 oz. ham, diced
  • 8 oz. fresh goat cheese, at room temperature
  • 1 package (17 oz.) of frozen puff pastry (2 sheets), thawed but still cold
  • 1 egg, beaten


1. In a large saut� pan over moderate heat, saut� onions in olive oil until lightly browned and soft. Add garlic and cook for another minute. Add spinach, salt, and pepper, and cook until the spinach is well softened. Remove and let cool.

2. When the spinach is cool, combine with parsley, ham, and goat cheese.

3. On a floured surface, roll out the puff pastry until it is an 11" x 11" square. Cut each piece into 4 squares.

4. Place 1/8 of the spinach/ham/goat cheese mixture into the center of each piece. Brush a small amount of egg around half of the dough (half from one corner to another). Fold the dough over to form a triangle, being careful to have a 1/2-inch rim. Push out any trapped air and then press the dough together well to seal. Using the tines of a fork, press along the edge to make sure the dough is well-sealed.

5. Place the turnovers on a baking sheet lined with parchment paper. Brush with egg. Poke the tops several times with a fork to let the steam escape while they bake. Bake for about 25 minutes in a 400 F oven, or until they are golden brown.

6. Let cool, and take on your picnic. Be sure to consume them within 2 hours of baking.
