  • 5 medium tomatillos, husked and washed
  • 4 medium yellow tomatoes, washed and quartered
  • 1/2 seedless cucumber, washed and chopped
  • 3/4 cup cold water
  • 2 cloves garlic
  • 1/2 jalapeno pepper, seeded
  • 2 oz fresh lime juice
  • 1 teaspoon sugar
  • 1/2 teaspoon kosher salt
  • 6 oz vodka
  • Ice

1. Preheat oven to 500F. Place tomatillos on a baking sheet, and roast until tomatillos are soft and their color has changed to olive green with splotches of brown, about 10 minutes. Let cool.

2. Combine all ingredients except vodka and ice in a blender and puree until smooth, about 1 minute. Pour into a 1-quart non-reactive pitcher and refrigerate until the flavors have melded and the mix is chilled, at least 2 hours.

3. Add vodka and stir well. Divide among 4 ice-filled glasses. Garnish as desired.
