Green Bean Potato Salad

  • 1/4 cup extra virgin oil
  • 1 teaspoon sea salt
  • 1/2 cup of finely chopped flat leaf parsley
  • 2-4 Yukon Gold potatoes (about 8 ounces each)
  • 1/2 lb. American Green Beans


1. Boil potatoes till tender to touch, about 15-20 minutes. Add a pinch of salt to water.

2. Boil green beans till tender to touch, about 10minutes. Add a pinch of salt to water.

3. Peel potatoes and dice in to small cubes.

4. Add potatoes & green beans into large bowl

5. While the potatoes and green beans are still warm, mix in sea salt, parsley & olive oil.

6. Plate, serve and enjoy! Bene!
