  • 1 cup sifted flour
  • 1/2 teaspoon baking powder
  • 1/2 cup sugar
  • pinch of salt
  • 2 Tablespoons softened butter
  • 2 eggs
  • 1 Tablespoon milk
  • 8 to 12 plums (preferably Italian prune plums), pits removed and cut into quarters
  • 1/4 cup half and half
  • 3 Tablespoons sugar and 2 teaspoons cinnamon for sprinkling

1. In a mixing bowl, combine flour, baking powder, sugar, and salt.

2. Add butter, 1 egg and milk to the dry ingredients. Mix until just incorporated.

3. Pat or spread this mixture into a well-greased 8" x 8" square pan. The mixture should be about inch thick, slightly thicker around the edges.

4. Arrange cut plums decoratively on top of this layer of dough.

5. In another bowl, mix together remaining egg and half and half. Pour this mixture over the plums.

6. Combine the cinnamon and sugar and lightly sprinkle over the top of the Pflaumenkuchen. Bake in a 375 degrees F oven for 30-35 minutes or until golden brown. Let cool before serving.
