Gazpacho

  • 1 ea. cucumber, peeled and seeded
  • 1 1/2 lb. ripe tomato, diced
  • 2 T. onion, diced
  • 2 ea. red peppers, seeded and diced
  • 1/2 tsp. garlic, minced
  • 1/4 c. olive oil
  • 1/4 c. bread crumbs
  • 4 oz tomato juice
  • 1 oz sherry or red wine vinegar
  • as needed water
  • as needed garnishes

Directions

For Garnish

  • Finely diced cucumber
  • Finely diced red pepper
  • Small croutons
  • Diced tomato
  • Minced parsley

1. Grind all ingredients in a blender or food processor. Do not allow the ingredients to become completely smooth.

2. Taste for seasoning and chill.

3. Serve the garnishes on top of individual cups of soup or serve them separately on the side of the soup.
