Easy Cheesy Sauce

  • 1 1/2 Tablespoons olive oil
  • 2 Tablespoons flour
  • 1 12 oz. can fat free evaporated milk
  • 4 oz. low grated fat sharp cheddar cheese
  • 2 oz fresh goat cheese
  • 1 1/2 teaspoons Dijon mustard
  • 1/4 teaspoon ground black pepper
  • Several drops Tabasco

Directions

1. In a small saucepan, cook olive oil and flour over moderate heat for several minutes, stirring constantly.

2. Add evaporated milk and bring to a boil, stirring constantly.

3. Remove from heat and stir in the remaining ingredients until melted and well combined.
