Dark as Night Chocolate Fudge

  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 1 cup sugar
  • 1 cup brown sugar
  • 1/4 cup light corn syrup
  • 1/4 teaspoon salt
  • 1/2 cup cocoa powder, special dark variety
  • 4 Tablespoons unsalted butter, plus more for greasing the dish

Directions

1. In a 3-quart saucepan, combine milk, cream, sugar, brown sugar, corn syrup, salt, and cocoa. Bring to a boil over high heat.

2. Add butter and continue cooking over high heat until it reaches 238 F. Remove from the heat and pour into a clean bowl. Let cool without stirring until it reaches 110F. This will take at least an hour. Be patient and do not rush it.

3. Pour the fudge into a mixer with the paddle attachment. Mix on moderate speed for 3-5 minutes or until the fudge goes from a glossy to a matte appearance.

4. Immediately pour the fudge into an 8 x 8 glass baking dish that has been previously well-greased with butter. Allow the fudge to solidify for several hours before cutting into 25 squares.

5. Store fudge in an air-tight container for no more than 1 week.
