Coffee Rubbed Lamb Chops

  • 1 1/2 Tablespoons finely ground, darkly roasted coffee
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cumin
  • 1 1/4 teaspoons chile ancho powder
  • 1 1/2 teaspoons smoked paprika
  • 1/4 teaspoons ground black pepper
  • 2 teaspoons and 1 tablespoon brown sugar, divided
  • 1 teaspoon salt
  • 8 lamb rib chops, bone-in
  • 1 1/2 cups beef broth
  • 1 Tablespoon Dijon mustard
  • 1 1/2 teaspoons cornstarch mixed with 1 Tablespoon cold water

Directions

1. In a bowl, combine coffee, cinnamon, cumin, chile ancho powder, smoked paprika, black pepper, 1 tablespoon brown sugar, and salt.

2. Set 2 teaspoons of the spice rub off to the side and reserve.

3. Coat the chops completely on all sides with remaining rub.

4. In a hot saute pan, sear both sides of the chops just briefly. Immediately transfer them to a baking sheet. Place the baking sheet in a 400 F oven and cook to desired doneness.

5. When cooked, remove from baking sheet and serve with coffee mustard sauce.

6. To make the coffee mustard sauce, in a saucepan, bring the beef broth to a boil.

7. Whisk in the mustard, reserved dry rub, and two teaspoons brown sugar. Return to a boil.

8. In a small bowl, combine cornstarch and cold water. Add to the liquid and bring back to a full boil.
