Brown Sugar and Spice Custard

  • 4 large egg yolks
  • 4 large eggs
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • pinch of nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1 cup half and half
  • 2 cups milk
  • 3 Tablespoons minced candied ginger
  • Maple syrup

Directions

1. Preheat oven temperature to 300 degree oven.

2. In a bowl, whisk the eggs yolks, eggs, brown sugar, vanilla, nutmeg, cinnamon and ground ginger until homogenous.

3. Heat the half and half and milk in a heavy saucepan over medium high heat just to the boiling point. Slowly pour the hot liquid into the egg mixture, whisking as you pour to temper the egg mixture until all the liquid has been incorporated.

4. Sprinkle the candied ginger in the bottom of the custard cups. Ladle the custard into custard cups and place in a pan filled half way up the sides of the custard cups with water. Bake for 1 hour in the 300 degree oven or until a skewer inserted into the center of one of the custards comes out clean.

5. Remove the custard cups from the water and cool the custard to room temperature. Refrigerate until needed.

6. When ready to serve, drizzle warm maple syrup over the top of the custard.
