- 2 cups diced onions
- 3 Tablespoons olive oil
- 2 green bell peppers, diced
- 6 garlic cloves, minced
- 1 28 oz. can black beans
- 2 15 oz. refried black beans
- 48 oz. low sodium beef broth
- 3/4 cup white rice (raw)
- 1 Tablespoon chile powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground allspice
- 1 teaspoon dried oregano leaf
Directions
1. In a large saucepan, brown onions and bell peppers in olive oil (about 10 minutes).
2. Add garlic and cook for another minute.
3. Add remaining ingredients. Bring to a boil, reduce heat to a simmer. Cook for 30 minutes.
4. Taste for seasoning and serve with garnishes.
Garnishes to serve with the finished soup:
- Grated cheese
- Green onions
- Cilantro
- Hot sauce
- Broken nacho chips
- Diced tomato
- Sour cream
