Black Bean Soup

  • 2 cups diced onions
  • 3 Tablespoons olive oil
  • 2 green bell peppers, diced
  • 6 garlic cloves, minced
  • 1 28 oz. can black beans
  • 2 15 oz. refried black beans
  • 48 oz. low sodium beef broth
  • 3/4 cup white rice (raw)
  • 1 Tablespoon chile powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground allspice
  • 1 teaspoon dried oregano leaf

Directions

1. In a large saucepan, brown onions and bell peppers in olive oil (about 10 minutes).

2. Add garlic and cook for another minute.

3. Add remaining ingredients. Bring to a boil, reduce heat to a simmer. Cook for 30 minutes.

4. Taste for seasoning and serve with garnishes.

Garnishes to serve with the finished soup:

  • Grated cheese
  • Green onions
  • Cilantro
  • Hot sauce
  • Broken nacho chips
  • Diced tomato
  • Sour cream
