Baked Italian Sausage Sandwiches

- 1 lb. (4 links) Italian sausages (can be hot or mild)
- 1 French baguette
- 1 cup roasted red peppers, drained and sliced
- 1 cup diced tomatoes
- 24 oz. high-quality marinara sauce
- 1/2 cup water
- 4 oz. grated mozzarella

Directions
1. Place the sausages in a 9 x 13 baking dish. Cook in a 350 F oven for about 30 minutes or until they are cooked through. Remove from oven. 2. Cut the baguette into 4 equal pieces. Cut each piece open lengthwise without cutting completely through so that the top and bottom are still attached on one side. 3. Fill the bottom of the baguettes with red peppers. Place a sausage inside of each baguette piece. 4. Place the baguettes, cut side up, back into the baking dish. Sprinkle with the tomatoes. 5. Mix together the marinara sauce and water. Pour over the baguettes. Sprinkle with cheese and place back in the oven for 25 minutes. Serve hot.
