Baby Spinach Salad with Champagne Vinaigrette

  • 2 cups baby spinach
  • Shredded carrots
  • Grape Tomatoes
  • 1 tablespoon shaved parmesan cheese
  • 1 tablespoon whole grain mustard
  • 2 tablespoons champagne vinegar
  • 1/4 C extra virgin olive oil
  • salt and pepper


1. Whisk together mustard, vinegar, salt and pepper.

2. Slowly drizzle in oil until all combined.

3. Toss spinach with vinaigrette. Just enough to lightly coat the leaves.

4. Garnish with carrots, tomatoes, and cheese.
