Apple Onion Mashed Potatoes

  • 12 oz. (about 2 large) russet potatoes, well cleaned, peeled and cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 cup diced onions
  • 1 large apple, peeled and diced
  • 2 Tablespoons butter
  • 1/2 cup milk, warmed
  • 1/4 cup apple cider
  • 1/8 teaspoon ground black pepper
  • Salt to taste


1. Cover potatoes in cold water. Add 1 teaspoon of salt to the water. Bring to a boil, turn to a simmer, and cook until the potatoes are tender (about 20 minutes).

2. Meanwhile, sauté onions in butter in a sauté pan over moderate heat. When they start to soften and caramelize, add apples and continue to cook until the apples are caramelized and soft. Remove from heat and reserve.

3. Drain potatoes and return to the pot over low heat.

4. Mash potatoes and stir in milk and apple cider.

5. Add additional salt, pepper, and sautéed apples and onions.
