  • 4 large eggs
  • 1/2 cup and 1 Tablespoon sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 3/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 4 oz. sliced almonds, toasted and coarsely chopped


1. To toast the almonds, place on a baking sheet in a 375� F oven until light brown, about 6 to 8 minutes.

2. Beat the eggs and sugar in a bowl until light and foamy.

3. Add vanilla and lemon extracts.

4. Sift the flour, baking powder, baking soda and salt. Add to the eggs and mix just until homogenous.

5. Fold the almonds in by hand or with a rubber spatula.

6. Shape the dough into a log about 12-inches long.

7. Place the logs on a baking sheet lined with parchment.

8. Flatten the logs slightly using your hands to about 1-inch thick.

9. Bake for 30 minutes at 325�F.

10. Remove the logs from the oven and lower the temperature to 275�F.

11. Let cool slightly and then cut each log while still warm into1/2-3/4 inch slices.

12. Return the slices to the baking sheet and lay each slice down.

13. Put in the oven for an additional 30 min. until lightly toasted and crunchy
