Traditional pasta is made from wheat flour which is obviously a problem for those who cannot consume gluten. Instead of reaching for gluten-free pasta that is designed to act like traditional pasta (and which I personally find not too exciting), I like to use a traditional pasta from Asian -- cellophane noodles that are made from mung beans. They have a really interesting texture! If you are unsure as if the cellophane noodles were made in a gluten free environment, contact the manufacturer.
