Bananas Foster Up Cake with Homemade Vanilla Ice Cream

  • 4 Bananas
  • 1 Duff Recipe or any Vanilla Cake Batter
  • 1 Cup Brown Sugar, divided
  • 1 tbsp plus 1/2 cup butter, divided
  • 3 tbsp Flour
  • 1 tbsp Rum
  • 2 Cups Heavy Cream, divided
  • 2 tsp Vanilla, divided 1/2 tsp Salt
  • 1/4 Cup Sugar
  • 8 cups of Ice Cubes
  • 1 Cup of Rock Salt
  • 2 gallon Zip Lock Bags


Heat grill to 350 degrees. Grease pans with 1 tbsp butter, flour and parchment.

Sprinkle 1/4 cup brown sugar on pans and add one layer of sliced banana to each pan. Top with cake batter.

Turn off middle burner and place pans in the middle (the area without direct heat).

Bake 25-35 minutes. Prepare sauce during this time. Allow to cool and remove from pan, keeping the banana on top.

To make the sauce, place 1/2 cup butter, rum, 3/4 cup brown sugar, 1/2 cup heavy cream, 1 tsp vanilla and 1/2 tsp salt. Place all ingredients into sauce pan and leave on top of grill while cakes are baking. After cake comes off the grill, adjust the heat to medium-high and put pan directly on heat. Stir until sauce is dark amber brown.

Toss in bananas and allow to caramelize. Place the sauce between the layers of your cake and pour the rest over the top.

To make ice cream, combine 1 1/2 cup cream, sugar and 1 tsp vanilla and place inside Ziploc bag. Be certain it is sealed. Add ice and rock salt to the second bag and squish around to combine. Place your sealed bag of ingredients inside the ice bag and seal the outer bag. Now swish with your hands for about 10-15 minutes.

Cut a corner off the bag and squeeze out your fresh, homemade soft serve ice cream.

Serve cake with ice cream. p>
