Tasty Tomato Sauce

  • 1 cup very good Extra Virgin Olive Oil
  • 5 lbs. heirloom tomatoes, cored and coarsely chopped
  • 2 yellow onions, coarsely chopped
  • 1 red onion coarsely chopped
  • 6 cloves of garlic, peeled and quartered, 1 handful basil leaves, torn, 1 handful fresh thyme, stems and all (tied)
  • 1 handful fresh rosemary leaves (tied)
  • 3 bay leaves (tied)
  • 2 anchovy fillets, packed in oil
  • 1 tbsp. salt, or more, to taste
  • 2 teaspoons freshly ground black pepper, or more, to taste
  • 1 tbsp. Hungarian or Spanish paprika

Directions

1. Heat the olive oil in a large saucepan or casserole over medium heat. Add all the ingredients and stir until well combined. Bring to a boil, decrease the heat to maintain a simmer and cook uncover for 2 hours.
