Quinoa, Lentils and Avocado

  • 1/2 c black quinoa-cooked like pasta (9 minutes) and drained
  • 1/2 c green lentils- cooked like pasta (12 minutes) let rest in cooking liquid for an hour and drain
  • 1/2 c finely minced scallions
  • 1/2 c peeled and diced avocado
  • 2 T sherry vinegar
  • 1/4 c extra virgin olive oil
  • salt to taste
  • pepper to taste
  • feel free to add additional herbs, chopped nuts, feta, olives etc.


Mix well and enjoy!
