Oven Roasted Tomatoes

  • 2 lbs. Italian style Roma (plum) tomatoes, each tomato sliced into 2 or 3 inch thick slices lengthwise
  • 2 tbsp. olive oil
  • 2 tbsp. finely chopped garlic
  • 2 tbsp. chopped fresh herbs such as basil, oregano, or thyme or 2 tsp. dried herbs (use individually, or combine)
  • Salt and freshly ground black pepper

Directions

1. Preheat the oven to 250 degrees Fahrenheit

2. Spread the sliced tomatoes on baking sheets or roasting pans. Drizzle with the olive oil and sprinkle with the garlic, herbs, salt and pepper.

3. Roast until the juices given off by the tomatoes have begun to thicken, about 1 hour. Using a spatula, scrape the tomatoes and all the juices into a non-reactive container. Use at once or cover and store in the refrigerator or freezer until needed.
